However, the basics are: activate a keyframe, set the current FOV as you want on the screen with your mouse or with the options I just listed, then move forward in the timeline to a later point and set another keyframe with the new FOV as you want it. So when you are in Freecapture Mode in Studio, you clicky-click on the keyframe button and you will have some options towards the bottom left of the screen to play with (Pan angle, Tilt angle, Roll angle & FOV). I think you can both in the phone app, but I don't use that myself (I've no interest in editing videos on a phone screen). Studio for PC cannot trim sections out of videos, or even join separate video clips together.
